
Monday, February 25 is National Cupcake Day and proceeds are being used to support SPCA’s and Humane Societies in many parts of the country. I was looking forward to baking dozens of cupcakes with my daughters so we could participate in fundraising. Sadly, my broken wrist has gotten in the way of our plans. Next year, I’ll just have to bake double the amount!
In honor of National Cupcake Day, I’m showcasing some cupcakes that I’ve presented on Life Through the Kitchen Window over the past year or so. I hope they inspire you to do some cupcake baking and worthy fundraising of your own, whether this year or next!
I hope someone brings cupcakes into the office tomorrow; I’ll gladly make a donation for one of these sweet treats in support of preventing cruelty to animals and funding programs that find loving new owners for abandoned pets.

Oh I don’t know where to start! I remember being impressed by those little boy blue cupcakes. Which do you recommend as my next batch for the girls???
I don’t know where to start either! If I could bake today I might start with the twice the vanilla cupcakes, but then again those chocolate cupcakes were really good. The little boy blue cupcakes are definitely the most spectacular but they take the most work, what with the little meringues. But then again, you’d have the meringues too! Actually, today I’d go for the lemon. Maybe …!

I didn’t know there was an official “National Cupcake Day!” It seems that you have made so many wonderful cupcakes that we should celebrate them every single day to the year!!
I only recently heard about this special day too, Rebecca. I think it would be a great holiday to have off! I’ve got quite a few cupcake ideas up my sleeve; who knows, maybe eventually I’ll have enough to make one each day of the year.
