Corn is in abundance everywhere I look right now. It’s always been one of my favourite vegetables, even though my father always scorned it as ‘chicken feed.’ Although he lived in Canada most of his life, he never could accept corn on his dinner plate, since it was fed to livestock in his native Belgium.
Growing up on the farm, there was lots of corn in the summer. Sometimes it was sweetcorn from Mom’s garden, and sometimes it was just-ripe field corn from a neighbouring farmer. Back then, corn wasn’t as sweet as a lot of what we find now, and I’m still thrilled when I find a variety that has more corn flavour and less sweetness to it.
With my own family of three children, there were only two vegetables they could all agree on: green beans and corn. It’s a good thing there are so many ways to serve corn!
