A little while ago I came across a post on the lovely blog Kitchen Heals Soul by Janice Lawandi (do check it out) that struck a chord with me, because Janice told the story of how her father used to surprise her with a glass of this strawberry drink. Such a simple act of kindness, to give someone you love a treat you made just for them. The other reason the post made an impression on me is because a drink consisting largely of puréed strawberries just sounded so good. I had one of those “why didn’t I think of this?” moments when I read about it.

I used Janice’s recipe as a jumping off point, not really jumping very far as I only added lime juice to come up with this minor variation. I surprised  the Culinary Enthusiast with a tall, cold glass of it one hot Saturday morning as he was puttering around doing chores outside. We sat at the table on the veranda together, chatting about our planned trip to the beach that afternoon and enjoying this refreshing icy smoothie, the flavour of the strawberries enhanced by the mint and lime. I didn’t add any sugar, letting the natural sweetness and tartness of the berries speak for themselves. And can you imagine the fragrance? Strawberries, mint, lime … heady stuff! The Culinary Enthusiast loved the drink, and was touched that I made it for him at a time when we were both busy getting ready to leave for the day.

Janice was right: an Iced Strawberry Smoothie is a berry delicious random act of love.

Iced Strawberry Smoothie

Thanks to Janice of Kitchen Heals Soul for allowing me to publish this minor variation on her recipe.

  • 300 gr strawberries, washed, hulled and roughly chopped
  • 3/4 to 1 cup ice cubes
  • juice of one lime
  • several leaves of fresh mint
  • sparkling water

Place the berries, ice cubes, lime juice and mint leaves in a blender. Add a splash of sparkling water and blend until puréed. If needed, add more sparkling water to achieve the slushy consistency you like. Garnish with mint leaves or a slice of lime if you’re feeling fancy.
