Sometimes the simplest things in life are best … a walk on a sunny day, avocado on toast and a short blog post.
The weather’s been cold here, although nothing like the last couple of winters, and this week there’s been a lot of sunshine that’s made my heart sing. It seemed fitting to celebrate this crisp, bright day with something easy and exotic, a simple lunch of sliced avocado on toast. Creamy richness, a bright spike of citrus, the heat of pepper and a sea salty crunch on crisp toast … really, it was all I could have asked for.
Bliss on toast in a puddle of sunshine …

- 1 avocado
- 2 slices toast using the bread you prefer
- half a lime
- freshly ground pepper
- sea salt
While the bread is toasting, slice the avocado in half lengthwise. Set the half with the pit on the cutting board and remove the pit with a knife (careful!). Using a large spoon, work it under the avocado flesh and around the skin to remove each half intact. Slice the avocado thinly.
Using any flesh that still clings to the skin, and perhaps a few small slices, spread the toast with a thin layer of avocado and give it a little spritz of lime juice. Arrange the avocado slices on the toast, sprinkle with more lime juice, and then a couple pinches of the pepper and a bit of sea salt.
