Today is Canada’s 149th birthday, and Canadians are celebrating right across this great country of ours. You can bet that strawberries will be turning up at all sorts of Canada Day feasts, so I thought this is the perfect time to present a roundup of recipes that feature the berry that signals the start of the summer season. If strawberry season is coming to a close where you are, keep these recipes in mind for when everbearing strawberries are available later this summer. Many of them will work just as well with frozen berries, too.
🍁 Happy Birthday, Canada! 🍁
Strawberries in Baking
Strawberry Cream Cake for Canada Day – I made this cake for Canada Day last year, so it’s only fitting that this recipe starts off the strawberry roundup!
Strawberry Chocolate Cupcakes with Strawberry Buttercream — I put my heart into developing this recipe for Little Miss E’s third birthday, and I think the love shows.
Strawberry Tea Loaf — this was the first time I baked with strawberries inside a cake, and I was pleased with the result
Sassy Rhubarb Strawberry Crisp — one of my favourite strawberry creations, featured in Gastropost
Even Sassier Rhubarb Strawberry Crisp — admittedly, rhubarb is the star of this dish, but the strawberries play an important part!
Strawberry Rhubarb Coconut Crisp Parfait — a refined-sugar-free and gluten-free version of a classic crisp
Cold & Creamy Strawberry Recipes
Strawberry Mint Nice Cream — you say ice cream, I say bananas, strawberries and mint!
Strawberry Yogourt Smoothie Pops — just the treat for a hot and humid summer day, making me forget about my frizzy hair!
Iced Strawberry Smoothie — a refreshing drink for a hot summer day
Strawberry Panna Cotta — I made this recipe when a dear friend came to visit, and I love the delicate strawberry flavour
Strawberry Chia Seed Pudding — a variation on my usual raspberry chia seed pudding, with a link to the original recipe
Other Strawberry Treats
Strawberry Marshmallows — these were a special treat at my daughter Jennifer’s baby shower, and they wowed the guests! I know little Miss H, who’s 18 months old now, would enjoy them.
Strawberries with Balsamic Vinegar — an Italian classic
Pickled Peppered Strawberries — my most unusual strawberry recipe, picking up on the trend of quick pickling fruit
Oatmeal Topped with Strawberries and Blueberries — okay, this is more of a serving suggestion than a recipe, but if you haven’t thought to top your oatmeal with chopped strawberries, do it now!
Parfait with Quick Skillet Granola, Yogourt & Berries — although the parfait pictured in this post featured raspberries and blueberries, I’ve eaten this almost every day for the last week with chopped strawberries instead of raspberries; it’s too delicious not to work into this post!
The Lake Huron Breeze (Strawberry, Mint and Lime with Gin) — you don’t have to be at the lake to enjoy one of these!
So there you go, 17 ways to enjoy strawberries on Canada Day or anytime they’re available. And if you just can’t choose, I won’t mind if you eat your strawberries just as Mother Nature intended — freshly picked. There’s really no way to improve on that!
