Blissful Simplicity ✲ Avocado Toast

Sometimes the simplest things in life are best … a walk on a sunny day, avocado on toast and a short blog post.

The weather’s been cold here, although nothing like the last couple of winters, and this week there’s been a lot of sunshine that’s made my heart sing. It seemed fitting to celebrate this crisp, bright day with something easy and exotic, a simple lunch of sliced avocado on toast. Creamy richness, a bright spike of citrus, the heat of pepper and a sea salty crunch on crisp toast … really, it was all I could have asked for.

Bliss on toast in a puddle of sunshine …

Avocado Toast

  • 1 avocado
  • 2 slices toast using the bread you prefer
  • half a lime
  • freshly ground pepper
  • sea salt

While the bread is toasting, slice the avocado in half lengthwise. Set the half with the pit on the cutting board and remove the pit with a knife (careful!). Using a large spoon, work it under the avocado flesh and around the skin to remove each half intact. Slice the avocado thinly.

Using any flesh that still clings to the skin, and perhaps a few small slices, spread the toast with a thin layer of avocado and give it a little spritz of lime juice. Arrange the avocado slices on the toast, sprinkle with more lime juice, and then a couple pinches of the pepper and a bit of sea salt.

  1. Couldn’t agree more – about something simple on a day when it’s nice to be alive. I remember when avocado was exotic here. The big deal thirty years ago was prawn cocktail in half an avocado. Unadorned it has a lovely nutty taste. A bit of pepper ad a squeeze of lemon, well, picture me smacking my lips. 🙂

    • Love how you put it Mary, that’s just the sentiment I was trying to express: simple good food is all I need on a day when life is good! I don’t think I’ve ever had prawn and avocado cocktail — time to go retro!

  2. Just this afternoon, I was making a wrap for lunch and thought all it needed was an avocado slice or two. But what to do with the rest? Voila! Mar to the rescue! Guess what I just added to my grocery list? Thanks, Mar!

    • I’m glad to hear that, John! It’s always a good to have a way to use up those pesky bits of leftovers. And hey, anything you can pop onto toast takes care of breakfast, lunch (and sometimes even dinner!).
